We usually don't make this with the potatoes, because Brian and Molly both aren't huge fans of potatoes, but I often use the rest of the juice to make gravy when we get home and we'll have rice or hashbrown-style potatoes with it. You could also use it for sandwiches (we do that the next day) or on a salad!! The roast beef ends up being REALLY tender if you follow the 6-8 hours on low, and it will literally melt in your mouth :) We usually pair it with salad or baked broccoli.
Now what I need to do is start being more adventurous with our slow cooker...I use it about 2-3 times a week now, but I want to try some different recipes in it and get some variety!! I like this roast beef, but I definitely get sick of it at times!!
Anyone have any good slow cooker supper recipes to share? :)

i'm assuming by slow cooker you mean a crock pot? because we have one and haven't used it in years!! it's a small one and we need to get a bigger one but i have a bunch of crock pot recipes that i haven't tried and it's sitting in my bookmarks. this one will def be bookmarked so thanks for this!

DeleteOooh I have a pretty good Pulled Pork recipe.. It's a Pork Butt/Shoulder Roast. Although, I would maybe ask the butcher which one would be best for a pulled pork in a slow cooker because some of mine are hit or miss. Some fall apart beautifully and others I have to tug apart. For the most part it's still good, but I much prefer the easy to pull apart ones.. Anyways.. I will have to email you the recipe if you would like it.
